After leaving Hills Road in 2007 Pippa went to the University of Reading to read History. She then lived and worked in London in public relations, firstly in the food industry and then for the Department of Education.
Following surgery for a double lung transplant in April 2017 Pippa now needs to take medication for the rest of her life. Pippa's diet is therefore limited by immune suppression, which means that she is unable to eat rare meat, blue cheese, runny eggs and unpasteurised or live products to name but a few.
She decided to compile a recipe book called 'Now What Can I Eat?' The book will contain recipes suitable for people suffering from immune suppression and many of the recipes are being donated by well known chefs, restaurants and foodies, including Tessa Ward, Alice Living and Lili Vanilli.
However, the book will not just be aimed at people who have had transplants. The dietary limitations are the same for people undergoing certain types of chemo and for those who suffer from rheumatoid arthritis, Crohn’s Disease or any other auto immune conditions. The book could help thousands of people as well as their friends and families providing healthy recipes to suit their condition.
Pippa is looking to raise funds for her book to be published as none of the large publishers have shown an interest.
